This cheese is produced in the Ferrari dairy factory in Bedonia, in the Alta Valtaro valley (Parma) using only milk from the mountain pastures of the surrounding villages, making the most of high quality, niche production, preserving the mountain economy of the area and thus safeguarding the local area and the activity of the people working there.

 

By sharing the values ​​relating to protecting typical character, biodiversity, traditional production expertise and the local area, the project has obtained the support of “Slow Food” in the creation of this exclusive tasting journey.

 

Patiently matured for 30 months, Parmigiano Reggiano Prodotto di Montagna has a balanced flavour with aromas reminiscent of the floral and fruity notes of the pastures. Its ideal accompaniment comes in the form of honeys from the “Ape Nera Sicula” e “di Alta Montagna” Slow Food® Presidia, with the sugary and slightly sour notes of the citrus jam made with  Ciaculli late mandarin and sauces made from Carmagnola peppers and Menfi spiny artichokes.
